Suggestion:
Increasing the output of redstone

Detailed description:
Making hoppers and droppers dispense items at a rate of 32 / 64.

It's VERY important that ONLY hoppers and droppers dispense it at a rate of 32/64 since dispensers are used for things like bone meal and other things to automate other farms. Adding the output to dispensers would break all of those farms.

Counter arguments!
Defense: "They would end up in the chests eventually anyway, and since you're waiting overnight for them to go into the chests they would all fit"
Offense: With the addition of the auto crafter it is optimal to use that in the farm. But since it's only 1 a second it's extremely slow.

Defense: "Why don't you add more chests and expand it then?"
Offense: There may be limited space or due to AFKing for long periods of time, it will eventually fill up and do the same thing.

Overall would waste thousands of emeralds and profit at the current rate.

Reason(s):
With the update to the newest versions, auto crafters was also added. This means we can increase the efficiency of our farms by using an auto crafter to make the ore item into a block so it is more compact and easier to sell.

And currently with the chunk chests bugged, it's very slow to farm.

Example(s):
If 2 stacks of emeralds was in a hopper, it would go into the chest at a rate of 32 or 64 a second clearing the 2 stacks in 4/2 seconds depending on the amount of output.

I think this was previously a thing however it needs to be added back. If It wasn't in the game prior, it would be extremely good to see this as an addition

Increasing hopper speed is not an ideal solution, as it could break the classic Redstone mechanics that are used in single-player worlds and most survival servers. The original behavior of Redstone is an important part of Minecraft’s core design, and changing it would negatively affect gameplay for many players who enjoy traditional mechanics.

Your issue can actually be solved by building a parallel sorting system, which allows item transfer at a much faster rate. It may seem a bit complex at first and requires a few extra blocks, but there are detailed tutorials available on YouTube that explain it clearly. If you really want high-efficiency storage or farm output, this system is a much better and more balanced approach.

Many servers already have large-scale farms such as bamboo or cactus farms, and these can be easily managed with a proper sorting or compression system, especially when items are converted into blocks. Increasing hopper speed is not a good solution because it could ruin the gameplay experience for other players on different servers, where balance and original mechanics are important.
