The netherite pick bug is already known, Its been around since the update to 1.16. You can still get lag spikes if your PC isn't up to scratch it isn't entirely up to the server to handle everything. -

I understand that but after the recent update survival was moved to 1.16, you can experiment with this by joining survival on an older version and taking a look at the striders in the lave or literally any new block, the game will find an alternative for you (Targets become hay bales, Crying... -

What timezone is this? I play fairly often and yes there are lag spikes but nothing nearly as bad as you seem to be making out. Are you sure your PC can handle mp servers? have you changed any settings, installed optifine etc? -

What do you listen to whilst building.
Couldnt name any off of the top of my head but probably like the most mainstream ones, Not that I'd go out of my way to listen to them but if they come on in somthing else I dont mind them -
